Lokum is a Turkish dessert made with water, sugar, and starch. It is a natural and healthy source of nutrition with many known benefits. For instance, protein is digested in the body and substances like urea, uric acid, and creatinin are released as a result. These substances cannot be excreted from the body in kidney patients and rise in the blood. Plain and vanilla lokum contain carbohydrate and are recommended for kidney patients. The name "lokum" for this dessert derives from the Ottoman word "rahat ul-hulkum" meaning relieving the throat. It has been known in Anatolia since 15th century and became widespread within the borders of the Ottoman Empire in the 17th century. Europe came to know this dessert as "Turkish Delight" in the 18th century through an English traveller. It used be made with a mixture of honey or grape molasses and flour. After refined sugar, which is known as loaf sugar, and especially starch was brought into the country, the method of production and its taste changed.
